Brian's work had a chili/soup contest on Valentines Day and we won 2nd place, which got us a $50 visa gift card. You'd think I would be pretty happy about this, but we really did deserve 1st place. And not just because I am biased. You see, they randomly selected three employees to judge the chilis/soups and those three came up with the winners. After the judgment, the entire company had a luncheon to partake of the homemade goods. At the end of the luncheon, our soup was completely gone. And the 1st place winner...not even close. So, as they say, 'the proof is in the pudding.' We should have won.
Chicken Enchilada Soup
(recipe from my BF Jamie Andersen)
1 T. oil
1 lb. chicken
1 small onion - diced
2 cloves garlic - minced
4 cups chicken broth
1 cup masa harina
3 cups water
1 small can enchilada sauce
1 t. salt
1/2-1 t. chili powder (depending on how spicy you prefer)
1/2 t. cumin
16 oz. Velveta cheese - cubed
Brown chicken in oil and set aside. Saute onions and garlic over medium heat until soft. Add chicken broth. Combine masa harina with two cups of water and whisk until blended. Add masa mixture to pot. Add remaining water, enchilada sauce, spices and cheese. Bring to a boil and reduce heat. Shred chicken and add to soup. Simmer for 45 minutes or until thickened. Garnish with tortilla strips, sour cream and avocado.

Ooo, definitely sounds like a winner to me! When we get off the whole no-dairy (and soy and peanut...:P) diet we'll have to try it. It's making my mouth water just thinking about it.
I'm sure it was 1st-place good! I know what a good cook you are! Maybe next time they should wait until the end and have solid proof that you deserve 1st place! Have fun spending your winnings!!
